How come the prophets call the races of the Covenant by their human nicknames e.g the Halo 2 cutscenes

Because they're speaking in English, and Bungie wanted players to understand who they were referring to. This is Halo 2, second Halo game ever made. Names of the Covenant species weren't widely available (or available at all) to the masses.
