Sikhism teaches self defense, which while not bad, isn't really peaceful, compared to Jainism, which teaches to do absolutely no harm to others.

I completely agree. Sikhism is far more practical , reasonable, and in a sense moral than Jainism, but Jainism is completely 100% nonviolent, which is why I would chose it as the most peaceful. That's they're core value. That's not the core value of Sikhism.
