All you meat eaters out there, I know you're lurking over some amazing steak recipes. The last time you had steak was a while ago and now you're entering a thread of juicy steak goodness. What is your favorite kind of steak? And "secret" tips or recipes you're willing to share?
I'm more of a Peppered New York Strip kind of guy. Medium Rare, minimal seasoning (pepper), sizzling butter and an appetite to match.
Also, beer is always great with steak.

Telling the kitchen to give their best guesstimate as to what "medium rare" is won't help you and it will never help you. I'd rather eat a week-old squirrel corpse roasted in the flames of an oil spill fire. If you're not demanding a juicy, organic, grass-fed filet or NY strip cooked medium rare with nothing but salt-and/or-pepper seasoning, you're an uncultured neanderthal and might as well stick with McDonalds.
